Subject: brewing with "wet" hops
Tommorow I brew my first beer using hots right off the vine. It is for
a local contest which requires the aroma hop to have been picked "this
year" which of course means right now. So my hops have been off the
vine less than a day at this point and I'm planning to brew tomorrow.
I'm told to use a 5:1 ratio compared to pelletized hops, by weight. Any
other advice?

I've always heard it's best to let the fresh hops dry first. A 5:1
ratio seems extreme to me. Are you using them for aroma or bittering?

5:1 is just right for using wet hops. I've done it more than once. The
OP should be aware, though, that the flavor you'll get is very differet
than using dry hops.

Hello, all. I wet-hopped for the first time this year for three
different batches, using my homegrown hops. I was told elsewhere to use
a 6:1 ratio, so I'm sure that 5:1 wouldn't be too much. The beer turned
out pretty good; it was somewhat different than past brews, but nothing
dramatic enough, in my opinion, to necessarily attribute the distinction
to 'wet-hopping'. Maybe I was just expecting too much, or just don't
know what to focus on. I was warned that my beer might have a somewhat
grassy flavor, but I never picked up on anything like that. In truth, I
think I let my hops get pretty dry on the bines, so maybe this wasn't a
good example of wet-hopping. I wish now that I would have weighed my
hops before drying them, and then I'd have a much better idea of _how_
wet they still were -- and what the actually correct ratio should have
been. I think my hops were probably dry enough to start with that a
smaller ratio might have been more appropriate -- maybe just 3:1 which
would be half the rate I actually used. But I just used them for flavor
and aroma, so none of my beer struck me as being over-hopped. It
definitely wasn't too bitter. The reason my hops were so dry is that
this was my first year to grow, and I wasn't sure when to harvest. I
was gone for a couple of days and when I got back and noticed that a lot
of the cones were actually turning brown on the bines, I knew I had
probably already passed the best harvest date. Anyway, I'm pretty happy
with the results even though I expected something _REALLY_ special from
a "Harvest" beer -- made with wet hops.

I expect next year will be much better. I hope I'll double my harvest,
and I'll have a much better idea about when to harvest. I have picked
up a lot of good tips in my Yahoo 'Grow-Hops' group, for any growers who
are interested (link in my signature block).
