Subject: yeast for Ayinger clone


Hello All

I'm putting together a clone of Ayinger's Jahrhundert-Bier and trying
to pick a yeast. I'm thinking WLP838 South German Lager yeast as
opposed to the WLP830 stuff since Aying is just south of Munich - this
sound right?

WLP833 is indeed the Ayinger strain. Correct me if I'm wrong but, I
believe Marc Sedam brought a culture from their brewery back to Chris
White a few years back.

Marc Sedam brought back the Zurich lager (the Hurlimann Samichlaus yeast).

AFAIK, Charles Rich obtained the Ayinger sample. He sent me some under
distilled water. I'm not sure how Chris got it. I sent it on to a couple
of Australian brewer friends of mine.

Cool -- I know Graham got it from Phil Yates, who got it from me, who
got it from Charles Rich or Jon Betterly in early 2000. As I recall,
Charles got it at the brewery, but I could be wrong.

I'm pretty sure the yeast was making the rounds in the Pacific Northwest
prior to when I got it from those guys.

I never realized that Chris got it from Graham.

Yeah -- Phil and I are still in touch. He still brews -- in fact he
co-owned a malt company in Oz for a while, but he's out of that at this
point.

Still flies -- I think he's supposed to be in the States next week
moving a plane from LA to Massachusetts. Still trying to convince him to
stop over in in N.O.

I think WLP 833 is supposed to be the Ayinger strain. I used to ranch
this one -- it's a decent yeast.

Really? German Bock Lager Yeast. Descriptions for the strain say it's
good for Helles style lagers - is Jahrhundert-Bier a Helles? I'm still
kind of green with German beers.

Yes -- it's a Helles. Having said that, don't take the "what the yeast
is good for" descriptions too seriously for the lager yeasts.
Personally, I like 802 for a helles (have one finishing up right now, in
fact).
