Subject: water crystals (mainly extract use) what's the point?

I know what water crystals are. I use them in my humidor. what purpose for brewing? i see this in a few extract recipes..... soak up mash? lighten the mash??? ..strange.

Its one of the main ingredients in automotive antifreeze.

The water crystals in the humidor are possibly a different compound, but definately for a different reason. In the humidor it is to help regulate humidity I assume. In brewing its for improving your mineral profile of the water. Water crystals are Gypsum (CaSO4) and Magnesium Sulfate (MgSO4). Togehter they both help make soft water hard water. Gypsum is also supposed to help settle out prooteins to help prevent haze.

Ethelyne(spelling?) Glycol is the automotive antifreeze. Propylene Glycol is normally non-toxic and is used in formulating liquid medicines and also as an anti-freeze in RV water lines. HTH, Mark
