Subject: using chocolate extract in a porter

Hi all, I intend to use a chocolate extract in my next porter during the secondary stage. I just ordered a 4 oz bottle. I am looking to get just a hint of the chocolate flavor in this brew. Has anyone ever user chocolate extract ? If so, how much did you use ? Thanks, Coroner

However, I have a clone recipe (from Zymurgy) for Rogue Chocolate Stout that calls for 1.5 oz. chocolate extract in the secondary. I did this and will be racking the batch to keg on 11/16, chilling, then carbonating. I should be able to post what my 1st sampling is like by this weekend. Hopefully that will be before you rack to secondary so I can give you an idea of how much chocolate taste is there. For what it's worth - my clone recipe called for 1.5 oz and I eyed out 1.5 oz out of a 2.0 oz bottle of organic chocolate extract. I'll let you know...

I'll let > you know... Great, please do let me know how it comes out. Funny thing. I decided to go wiith the choco extract because I emailed Rogue and asked them what they used in their Stout. I love their choco stout ! The reply I received was..... "It's an imported Dutch chocolate extract in the Chocolate Stout. Cheers, Stacey" Thanks, Duke

So sorry for the late reply. I actually kegged this last Wed, then carbonated on Friday PM and tasted on Sat. In my opinion, it could use a >touch< more chocolate, but I've had two other beer 'snobs' critique it and they said it was perfect - don't change anything. In light of that, I'd recommend 1.5 oz of chocolate extract per 5.0 gallon batch. Hope this helps. If you were in Boise Idaho I'd be glad to bring over a growler and let you give it a go. PS - if you get the hankerin', try out the zymurgy clone to the rogue chocolate stout - I think it's one of my favorite homebrews. I followed to a T and I think I'll be brewing a batch of this and giving out bottles for x-mas gifts. For what it's worth. Follow up- Sat. PM 8:00 MT USA - just finished this keg. 3 of us drank on it last weekend during a poker party, I tapped off one gallon for a buddy that I owed. I NEED to do another batch ASAP. I do believe this is the fastest I've ever killed a homebrew keg (5.0 Gal) - just over one week. YUM!
