Subject: unmalted wheat

Hi. I just got a big bag of standard wheat (non-malted). Is there anything I can do with this for brewing? I know it has no diastatic power, but if I mixed it in at 15-20%, wouldn't the enzymes from the barley malt convert the wheat starch to sugar (maltose)?

Belgian Wit beers are up to 50% unmalted wheat, so you should be able to go up to that much and still get conversion. If you are not afraid of storm troopers kicking in your door for breaking german purity laws, you could make a non-traditional German Weizen using 50% unmalted wheat. I don't think it would taste any different than one made with 50% malted wheat. But I've never tried that experiement. Other beers that traditionally use unmalted wheat: Lambics ... 30-40%. You can definitely use it in a Kolsch-style ale. Is it important to you to remain true to style or to make use of a nice windfall? I've seen a couple of wheatwine recipes if you wanted to use it faster. Have you ever tried to make your own (wheat) malt? It might be a fun addition to your hobby.
