Subject: temperature for secondary


My tripel fully attenuated in the primary from 1.085 down to 1.009. i
now have it sitting in the secondary at the same temp it fermented -
72*F. Should i just leave it at this temp for the month or would there
be advantages to moving it to the fridge for that time.

Temps are a lot more critical for the primary fermentation. It would
probably be fine to just leave it where it is for the secondary. Moving
it to a colder location is alright too, although aging will occur more
slowly. On the other hand, doing something like crash cooling will
improve clarity a lot.

Usually what I'll do is secondary at the same temp as the primary, and
then crash cool a couple days before I bottle/keg.
