Hi everybody, This is my first time using a secondary fermenter (5 gal glass carboy) and I just siphoned from my primary into it. There is a good bit of space left at the top which I figure is full of evil dirty things like oxygen. Should I boil some water and top it off? That seems so... diluting... Thanks! c

Depending on how your fermentation went, there should be yeast "working' in there producing CO2 that will push out the O2. Even the act of racking will cause some of the dissolved CO2 to come out of solution and push the O2 out. Just leave it and you'll be fine. Even if there is not enough CO2 to completely purge the head-space, the CO2 that comes out of solution is heavier than air and will have a blanket-effect over your beer. Avoid agitating the beer if you are concerned about it, but everything will be fine. Don't add water, you'll just dilute the beer. The extra headspace is nothing to worry about. There's probably very little oxygen left in there anyway. Usually there's still some fermentation activity left when you rack to secondary, so the CO2 created would help purge the headspace. Even if there wasn't, just racking the beer will knock out some residual CO2 that will help purge. IMO, nothing to worry about. Just leave it alone. John.
