I think it gets me closer to the liquid temp than the air temp that way without actually putting it in the carboy. When I'm rigged for serving instead of fermenting I just let it dangle in there somewhere

I prefer to place the probe in a Cu tube sealed at the lower end and placed in a jar of water on the lowest shelf. -- Thanks, Hank
