Subject: scorched the starter a bit


Hi all,

Well I did something I have never done before and scorched a portion of the
malt in my starter flask during the boil. Not sure why it happened this
time as I have made starters hundreds of times in the past, but anyway. I
didn't notice this until just now, the day after pitching my yeast. It is
fermenting away as usual. Is the scorched malt cause for any concern/off
flavors, etc... or should I be ok to use as normal ?

I wouldn't be too concerned. I don't think it will negatively affect the
batch.

I think the only thing you'll notice is a lil smokey flavor.

Really? I would probably guess it wouldn't be noticeable (Depending on
the size of the starter and how "scorched" it is). Plus smokey? I'd say
caramel with maybe a bit of bitterness depending on how scorched, not
smokey, depends on your palate a guess.

Speaking of smokey a coworker just did a smoked porter (smoke some grain
in his smoker). He just bottle primed it, but I got to try it
beforehand. Not a huge amount of smoke flavor, but it is noticeable on
the back of the tongue. Quite pleasant in a savoury sort of way. It'll
be interesting to see how it finishes.

Probably nothing to worry about, especially if you decanted the liquid
before pitching the starter.
