Subject: one of those steeped or mashed questions


I was driving past a brew shop (never been there before) and
I thought to myself "a good time to stock up on a few things I need for
a few brews I have planned"
I pop in and front up to the guy behind the counter (GBTC).
Me " hi, I want some light crystal malt for a pale ale I am planning,
I am not mashing, I just want something that can be steeped".
GBTC "yes, we have a few different types, what exactly are you after?"
Me " I want some crystal malts that I can steep that would be suitable
for a pale ale"
(I spot a large glass jar labelled 'English Crystal' - the stuff looks
about right)
Me (pointing) " That looks like what I am after, does it have an L
(lovibond) or EBC rating?"
GBTC "no rating, it's just English Crystal malt"
Me " OK I'll have half a kilo of that please, do you have anything
lighter, I really want the ale to be pale"
GBTC " we have some of this (motions to a large glass jar labelled
Vienna 5L).
Me " does that need to be mashed, I don't plan on doing a mash, I just
want to steep some speciality grains?"
GBTC " no you don't have to mash it, we use it all the time and don't
mash it" (the brew shop is attached to a small local brewery)
Me " are you sure it doesn't need to be mashed, I don't want to mash,
just steep the grains?"
GBTC " no it doesn't need to be mashed".

Now this stuff doesn't have any of the colour I associate with crystal
type malted grains, in fact it is quite white.
It's not labelled caravienne or anything like that, just Vienna.
This stuff is supposed to be mashed isn't it?
Wouldn't you just end up with a starchy beer if you steeped instead of
mashed?

Yes, vienna needs to be mashed.

Yeah, I think Vienna needs to be mashed.

Yep, how much starch you get will depend on how much of the Vienna you're
using. Ideally it should be mashed though.

BTW, when in doubt go to http://www.howtobrew.com/section2/chapter12-4-1.html
A "--" in the "PPG Steep" colum means that you need to mash the grain.
