I can see that a three level system has a strong advantage in that no
pumps are necessary. A two level system only needs one pump and minimal
tubing. A three level seems to require either two pumps or a complicated
tube and valve system.

I like the one level systems because everything is easy to get at, but I
want to avoid cost and complication. I'd like to hear from others who
have seen single level system or if you are currently using a single
level system, let me know what you think. I'd love to get some advice.

Absolutely. I use a "1.5 level" system -- the kettle & tun are on a
table, and a cooler is raised somewhat on a couple of milk crates so
that it can drain the sparge water by gravity over the mash while I
pump from the mash to the kettle:

Only the kettle is heated. The whole thing is rather temporary, so
it's easy to disassemble and store.

How do you plan on draining the runoff from the sparge into the kettle? IMO,
you'd at least want a two level system just so that you can do that via
gravity. Even if it's as simple as putting the latuer tun on your kitchen
counter and putting the kettle on the floor.

Multi-tied systems don't have to be complicated. You don't even need any
pumps for a three tier system if you don't want them.

I have a single level system, and use 2 pumps. One for sparging with,
the other to pump from the MLT to the brew kettle. It's just a matter
of adjusting the discharge valves to maintain a water level above the
grain bed. Another use of a pump is to recirculate your HLT water to
get a better indication on your thermometer, and pumping your wort
through a CFC into the fermenter.
