Subject: not looking good


Well it's only been 5 days since pitch on the yeastcake and I know bubbles
mean nothing but looks like my yeast may have pooped out. I transferred my
brew to secondary cause I need my 6.5 for TAFTHBD tomorrow and it looks like
it's already going through clarification and the yeast settling out. No real
bubbling activity in the airlock, again I know gravity readings are
paramount and I took one...1.028 and the OG was 1.093. I'm saying the beers
prayer that somehow the yeast is still doing something.

Lemme guess--you're fermenting in a bucket? Odds are, the gasket didn't seal properly and most of the CO2 escaped around the edge of the lid (hence no airlock activity).

You're already at about 67% attenuation, which maybe isn't your ideal, but ain't too shabby, neither. Stop stressing. Everything's going fine.

Nope, in a 6.5 gallon carboy with a tube large enough to fit in the neck, 1"
I think. And I just racked to a secondary 5 gallon carboy and have an
airlock on it and the beer looks like it's clarifying already.

1.093 to 1.028 is almost 70% attenuation. It could be still fermenting the
last little bit slowly, but it doesn't sound like there's anything wrong
with your yeast. What attenuation were you expecting?

I got a 1091 down to a 1.020 last time...was hoping at least 1.022.

Yep...just was a little short on water I guess, but used 1028 yeast cake
this time instead of straight pitching 1056 from a smackpack last time, no
starter.

I'd definitely give it more time then. It's certaily possible that it just
slowed down after initial fermentation and will continue to drop.
