As some of you may remember I am back to brewing after some time away. One of the first batches I did after coming back to the hobby was an oatmeal stout that I had had the crushed grains for in a paper bag in a cool dark place for 3+ years. I figured what the hey! for the cost of some hops (which are free when you live in Yakima)it was worth a try. The stout wasn't *bad* by any means, but if you split the after taste into three categories and labeled them begining, middle, and end I would say that the middle was missing. Instead there was a kind of watery taste where it should have been. This seemed to finally go away with the last six glasses or so out of the keg. I wrote it off to the age of the grain. I then brewed quite a bit more. Some hefe, some amber, some rocketfuel, some IPA and another oatmeal stout. The second oatmeal stout has the same empty spot in the middle of the finish. This is perplexing me. The other beers don't have it. Just the oatmeal stouts. Any ideas? I know that it is quite hard to give advice on this kind of thing over the net. If it was bottled, or I had a CP filler I would send out a couple of bottles just to get some feedback, but it is all kegged. This is not a taste that makes me think there is something wrong with the beer, like infection or diacetyl. It is more of a flat spot in the finish of the taste that makes me think there is something missing. The second batch that is still on tap is about 3 months old now and I have only had about 6 glasses out of the keg. I am trying patience to see if that fixes it, but 3 months seems like it should be long enough to remedy it, no? Sorry about the long post. Ryan

The first thing I'd do is compare your stout to a quality commercial oatmeal stout to try to identify the missing character. I bet, though, without even tasting it, that you don't have enough sweetness in the middle of the flavor. Stouts aren't normally very malty, but oatmeal stout is sweet. I'd examine your mash temperatures and maybe consider adding some dark crystal malt. Scott

Nope, don't have it at work with me, will have to find it at home. I know that it had 4lbs of oatmeal in it. And I want to say that it had 18lbs of 2-row, but I am not remembering perfectly as it has been quite a while. Will see if I can find my notes when I get home. Ryan
