What amount of loss is typical between fermenting and bottling Depends on how much you leave behind when racking. Losing 1.5 gallons sounds like an awful lot though. I like to get the racking cane angled down towards on side or the other of the fermenter, and then tilt it slightly to help get more to drain out. If you're careful, you can do this without picking up too much sediment. > 2. Will the astringent taste work itself out - probably. I've heard that it can age out, but I've never had much luck with that. I think it probably takes a long time. Sounds like you got some temps a little high or else over sparged? John.
