Subject: how does this sound??

The weather is supposed to be nice again here in the middle of Wisconsin(40°F) this weekend so thought I should brew another batch and put it on the yeast cake(pacman) from last Saturdays cooking 6lbs DME--light 1lb DME--wheat 1/2lb crystal 60L 1/4lb chocolate malt would like to try some of the Sorachi Ace hops--maybe about a half+oz at boil and 1oz at flameout---think the early hops should provide enuf bittering hopefully the end result will be a decent amber type ale Input??? thanks Buzz

The pale is interesting though some people don't like the flavor; it's just different. I haven't had the wheat beer yet. Phil

Assuming this is a 5-gallon batch, the extract bill and resulting OG and alcohol level is a bit on the high side for either an American or Irish red ale. Consider cutting back by a pound of extract... but of course, that's entirely up to you. Actually it might be nice to give it some extra kick for your enjoyment during the remainder of the cold Wisconsin winter. Incidentally, I'm also in Wisconsin and am planning to brew an Irish red ale myself within the next week or so. My recipe uses a few ounces of roast barley instead of chocolate. In Manitowoc, the best places are probably the Wallstreat Grill, Capone's, and Time Out. Each have a pretty reasonable selection. We do have a brewpub, the Courthouse Pub, but I really wouldn't recommend it, it's snooty, and all the beers taste the same -- diacetyl.
