I know very little about hops still, chemical compounds and such so I did a
google on noble hops...on wikpedia I found this information:

The term Noble hops traditionally refers to four varieties of hop which are
low in bitterness and high in aroma. They are the central European
cultivars, 'Hallertauer Mittelfrueh', 'Tettnanger', 'Spalter', and 'Saaz'.
They are each named for a specific region or city in which they were first
grown or primarily grown. They contain high amounts of the hop oil humulene
and low amounts of alpha acids cohumulone and adhumulone,

**** as well as lower amounts of the harsher-tasting beta acids lupulone,
colupulone, and adlupulone. ****

Humulene imparts an elegant, refined taste and aroma to beers containing it.

Like I said I don't know alot, I'm still a NOOB and was looking up noble
hops and remembered this thread when I saw chemicals in certain hops being
"harsh". Just thought it might be of interest.

Did you know the population of elephants has tripled in the last year??

I think I might change that entry in Wikipedia myself to declare that
hops taste almost exactly like strawberries.

Noble hops are generally of the "smooth" bitterness type. They tend to have
lower AA% than other types, and relatively low cohumulone levels.

Yea, I'm learning...I just thought it would be of interest after reading the
heated debate of the "bittering hops" thread.

I don't remember a heated debate. Some flaming/trolling going on, but the
posts I remember that were actually on topic all seemed to be of the
relatively same opinion.

I'mn sorry, but I can't take ANYTHING from Wikipedia seriously, even
when I think they're correct!

I think of it the same way as anything else on the internet. It's worth
looking at, but you want to take it with a couple grains of salt.

Great story about Wikipedia on NPR this morning. They quoted Stephen
Colbert as calling it "the democratization of knowledge"!

I understand that an accuracy check of Wikipedia said they were
comparable to the Encyclopedia Brittanica.

On the Colbert Report, the host changed the Elephant entry to say that
the population of elephants had trippled in the last six months. It was
corrected within hours.

Hah! That's great! I looked right at that link on HopUnion's site and
assumed it was something else, so I didn't download it. D'oh!

Thanks for the heads up. That was exactly what I was looking for!

Does anyone know of a good source of information that lists the major
hop varieties and their levels of cohumulone?

Ray Daniels' "Designing Great Beers" for starters. Excellent book.
