I was just at gordon biersch and they had a wheat beer with a banana
flavor. I recall someone posting they had the same results. Whats the
secret?

Where do you live, I have half a corny you can have!

All I did was ferment the primary on a hefe warm and then secondary at
60F. Smells and tastes like mild ripe bananas.

Ryan who is barely a hefe fan to begin with and has been pushed over the
edge with this one.

Yes, sorry I guess I should have used some sort of punctuation to make
that more clear.

But as another poster has said, just ferment a hefe too warm and you
will get plenty of banana.

Banana and clove are common in wheat beers. It mainly comes from the yeast.

I have no doubt you are correct here John.
I can't stand those flavours in beer and I can't stand Hoegaarden either
(Yuk!) so I'll never be making any.
However, I made an ale some time back with a fairly high proportion of wheat
and fermented it cool on Nottingham and it came out with very noticable
banana and clove, although a lot more subtle than say Hoe... (can't even SAY
that word, makes me cringe)

Yeah, I'd agree that wheat in general will give those characteristics. I
think the yeast enhances it a lot though. IMO, if you can't stand
banana/clove in beer then you'd probably want to avoid significant
proportions of wheat.

Yes, specifically use a bavarian yeast strain. Wyeast 3068 is the
Weihenstephan wheat yeast and will give you lots of good clove and
banana flavor. I happen to really like a funky hefeweizen full of those
flavors and this stuff does the trick.

Ferment a hefe or a koelsch too warm, and you'll have all the banana
you want...
