Whats the > secret? > > Jim Where do you live, I have half a corny you can have! All I did was ferment the primary on a hefe warm and then secondary at 60F. Smells and tastes like mild ripe bananas. Ryan who is barely a hefe fan to begin with and has been pushed over the edge with this one.

But as another poster has said, just ferment a hefe too warm and you will get plenty of banana. Ryan

I have no doubt you are correct here John. I can't stand those flavours in beer and I can't stand Hoegaarden either (Yuk!) so I'll never be making any. However, I made an ale some time back with a fairly high proportion of wheat and fermented it cool on Nottingham and it came out with very noticable banana and clove, although a lot more subtle than say Hoe... (can't even SAY that word, makes me cringe) Steve W (in Aus)

IMO, if you can't stand banana/clove in beer then you'd probably want to avoid significant proportions of wheat. John.

Wyeast 3068 is the Weihenstephan wheat yeast and will give you lots of good clove and banana flavor. I happen to really like a funky hefeweizen full of those flavors and this stuff does the trick. _Randal
