Subject: candi sugar


I've read its best to add honey to the end of the boil to sanitize and
too keep the honey character in your fermented beer. Would the same go
with belgian candi sugar? I've always read to add it with the first
hop addition but would it make a difference if i added the candi sugar
at the end of the boil to keep some of its unique character?

We briefly chatted about this not long ago in another thread. It kind of
depends. When you add your sugar could affect hop extraction, and could
affect the amount of carmelization to the sugars. There's no wrong answer,
it's more what you are looking for.

Personally, I'd do what the recipe states if you want your brew to be as
similar as possible to that of the creator of that recipe. But if you do
something different, you'll still have tasty brew to be proud of.

If you're in the US and using the stuff sold as Balgian Candi sugar
from the homebrew store, chances are it's just table sugar anyway. However,
adding it at the end of the boil (or even after the boil) shouldn't hurt
anything.
