Subject: all-grain brewer forced to brew from DME - needs help

Hi, all, I'm going to move to JP for a while. I know that they're strict, but I'm confident that I can make something under the radar [beats $24 for a 12 pack of Kirin at the supermarket]. That said, I know that most of the locals - some being my family - like lagers and such. So, I'd like to be able to make something acceptable to that pallete. I bought some hop pellets (Mt. Hood, Spalt, Saaz) and can send some DME (light / pilsner / wheat / etc). The problem is this. I haven't done extract for a while. I know that some things just work better from grain. The styles I'm considering doing over there - blonde, steam, kolsch, alt, schwartz - I've only done from grain. Which, if any, would translate well to a minimal DME recipe without tasting bland? Surely there are other legitimate uses for malt besides brewing... If you really can't get malt, this might be a good opportunity to learn how to malt your own grains. Surely they can't bust you for illegal germination, can they? Scott

> Think Mead! Nice idea. :-) But if I'm only there 1-2 years, I don't see that as matching my needs. As a side note, their native bees are 3" long vicious beasts - I think they'd likely kill European honey bees in no time. So, I'm guessing honey's not cheap - but it might add some gravity and character to an otherwise simple brew. Thanks, P
