Subject: Why am I losing hop flavour/aroma

OK...I tasted what I thought was infected beer. It tastes OK even though it's not carbonated yet, I bottled 3 days ago. When I went to secondary it was very citrusy and highly aromatic...alot of chinook and amarillo hops as well as I dry hopped it when I racked it. Now it's more malty and I still taste the bittering but most of the hop flavour is gone. I just can't figure out where all the hop flavour/aroma went in 8 days of secondary, considering all the hops including the dry hopping. Thanx in advance. Gerard

That beer will change a lot over the next few weeks. I've found that frequent sampling allows one to obtain a lot of empirical data with respect to time in the bottle. :-) In my experience (with ales) the hop character changes a lot with time in the bottle. I seem to like all of my ales better after at least 1 month in the bottle.
