Subject: Which wyeast for Chimay clone?


Ok. I have tried three times to culture yeast from Chimay. Once from
a bottle of Grande Reserve which was DOA and twice from Premeire. The
first was something funky. It seemed ok at first and then went bad.
Smelled fine, but got some weird floaties. Then some really weird
black ribbon looking structures floating in it. I poured that down the
drain. Next I drank another bottle of Premeire and a bottle of St.
Bernardus Prior 8. Horrible night. No one should ever have to do
that. Shear torture. ;) Tried culturing from them. The Chimay seems
DOA like the first bottle, and the St. Bernardus is doing something,
but very slowly. If it doesn't kick in and let me build up a decent
starter by the weekend, what commercial yeast would you suggest for my
belgian? I've used wy1388 Belgium Strong and wy3724 Saison. I've
heard that the wy1214 is supposed to be Chimay, but doesn't give the
same results as cultured yeasts. Anyone have opinions on wy1762 Abbey
II or wy3463 Forbidden Fruit? Here's the recipe in case it would have
much bearing. ;)

6lb Laaglander extra light DME
3lb Muntons extralight DME
1lb 40L Crystal
8oz. 140L Special B

1.5 oz. Hersbrucker 4AA 60 min
.5 oz. hersbrucker 10 min

Yeast TBD.
