This would use up all of your stuff except for one pack of yeast and a few ounces of black patent. Use all of your malts in a 5-gallon batch EXCEPT only use about 6 oz of the black patent. Use all the Cascades in a 60-minute boil, add 1 oz Willamette at 15 minutes remaining, and steep the other 1 oz Willamette at flameout. Either yeast would work for this, but it is worth consideration that the Windsor will end up with a very thick, chewy, complex beer, while the Muntons will end up a bit more clean with more "normal" body. Be sure to ferment warm, at 65-70 F. This beer may take a little extra time to ferment. Yeast nutrient would be a good idea. The beer should age very well. You'll probably end up with about 8.5% ABV, 50 IBU, plus or minus. Irish red ale is good, but man oh man, just the thought of that Imperial stout makes me shiver. That's what I'd make. And I'd go all out and use the Windsor, just to see what kind of complex thick stuff results. However the Muntons should work great as well, and might be a safer bet. Yep - Thanks to all. Made a stout bottled it last Sat. Had one 4 days later. Insipied / thin little beer so far. Maybe more aging in the bottles will help - assuming I don't drink it all first. I'll drink anything. I did a mini mash from MoreBeer on Sun. - the oatmeal stout. Let's see how that turns out.
