Subject: What Hops Should I Try? Suggestions Wanted

I have an arrogant bastard recipe I tried before and I was underwhelmed by the flavour and aroma, although the bittering was good. The recipe follows: (Starting Gravity: 1.074-1.080) (Finishing Gravity: 1.014-1.020) (Approximate Alcohol Content: 7.4-7.9%) (78 IBU) Ingredients: Amber DME 4.0 pounds Wheat DME 4.0 pounds *Special-B 8.0 ounces *Biscuit 8.0 ounces *Aromatic 8.0 ounces *CaraMunich 8.0 ounces Corn Sugar (Bottling) .75 cups Magnum (Bittering - 60 min.) 1.0 ounces Columbus (Bittering - 50 min.) 0.5 ounces Centennial (Flavoring - 30 min.) 0.5 ounces Centennial (Finishing - Dry) 1.0 ounces Irish Moss 1.0 package Wyeast #1056 American Ale 1.0 package I couldn't find centennial when I brewed it before so I used Amarillo 7.1% as a substitute. The beer tasted fine, just wasn't what I expected. I"m going to make another batch this weekend and last night I just bought almost 5lbs of pellet hops including: centennial 8.5% AA chinook 12% simcoe 12.6% columbus 14.8% warrior 16.8% I also have a few ounces of Amarillo 7.1% from before. From what I'm reading Amarillo, Simcoe and Warrior are know for low cohumulone levels about 21% to 24% for Warrior and Amarillo and 15-20% for Simcoe thus theoretically giving a smoother bitterness, which is what I would like, so I will probably use one of the 3 or a combination for bittering. As well I will be trying first wort hopping for the first time but not sure on what flavouring hops I would like to add to the mix, nor which I will use for dry hopping. I really want to use this recipe as a "base" recipe to experiment because to me my first attempt came out tasting like an IPA, a beer I really love. Any suggestions on hop additions, including upping the hop levels,addition times, etc. are eagerly welcomed. Thanx in advance. Gerard

I took the 0.5 ozs of flavoring hops I've always used in an English pale ale recipe (at 20 minutes) and moved them to FWH and *wow* was it a much stronger flavor. Moral of the story - be careful. I'm sure the other folks in here can add some info. 1 oz of boiled flavoring hops does *not* seem to be the same as 1 oz of FWH for flavoring. I'd go back to your original recipe, but double the Centennial addition. AND, add 1 oz. Centennial as FWH. You'll need to recalc your bittering addition, unless you want the added bitterness from the FWH and doubled Centennials. ------------ >Denny -- Life begins at 60...1.060, that is.
