Subject: Vanilla Oatmeal Stout

I am thinking of making my usual all-grain oatmeal stout and then adding a scored vanilla bean to the secondary. What do you all think of this? Has anyone else tried it? Will the oil from the bean (and oats) cause the beer to have no foam? I just want the slightest vanilla taste. Is one bean too little or too much? Any help would be greatly appreciated. I am a bit timid about adding "strange" stuff to my homebrew, but the vanilla/oatmeal combo sounds pretty good. Thanks, M

This usually gives me the desired affect of just a slight taste of the vanilla. I just cut the beans into 1/2" pieces, soak them in a 1/2 cup of bourbon (or whatever I have on hand) for a bit and then dump it all into the stout. Good luck, Duke

That's tricky because I've seen single vanilla beans that are roughly twice the size of others. I think I used to 5" beans in the pumpkin beer without much change. I'm trying to add vanilla to a stout now and have aged it for over a month already with a single 8" bean; I cannot pull out its contribution when I test it. I did a mead with 3 6" beans and it was certainly present there. Mind that I was aging for a very short amount of time, so I added a little extra to get the flavor quicker. My own experience suggests a single bean is a waste of $5 or whatever they cost you. > Any help would be greatly appreciated. I think the best results came from grinding up the bean in a coffee grinder with a touch of sugar. The sugar keeps the grinder from making sounds like it's about to explode.
