Subject: Update on Delicious Wit


I'm having a lazy afternoon tasting of my recently carbonated
Wit....mmmmm. Thanks to all for your help. It came out balanced with a
slight nudge towards the sweet side, which I think is from the sweet
orange peel. It's OG was around 1.050 (it was 1.047 before the boil- I
don't ever check it right after the boil) and F.G. is 1.010 with
WLP400. The chamomile lingers subtly in the background- sort of a faint
apple quality. Next time I might put in the full pepper corn addition
in Mike Dixon's recipe. I might decide to do 3/4 bitter orange and 1/4
sweet orange and see how that comes out- but either way I'm in heaven
:) Thanks to Mike's recipe and everyone else who chipped in with
advise.

Glad it worked out, be sure to spin those corns in a coffee grinder till
dust...
