Subject: Tweaking suggestions

I have an IPA kit from the same makers of another kit that I am not satisfied with so far (bottling that one today). I want to tweak it some cause I can't return it cause I already opened the box. compared to another IPA I have in secondary now it seems weak in comparison. Any suggestions on what I can add to tweak it are humbly welcome. The recipe is as follows: 7 lbs. coopers plain LME 1 lb. crushed crystal malt 60L 8 oz. crushed victory 2 oz. northern brewer hops (bittering) 1 oz cascade hops (finishing) 11 gms Nottingham yeast specs: OG 1.050 to 1.055 FG 1.012 to 1.025 ABV 5% to 5.5% So far I have purchased 8 oz. Munich malt and 1 oz. Columbus hops (finishing) and 2 oz. dry hops for adding to the secondary to bring the flavour and aroma up some. If I wanted to add ABV I know I need more malt of some kind. Any suggestions on types of DME I might add? I prefer a high ABV, closer to 7%. Thanx in advance. Gerard

Thanx in advance. > > Gerard Well, the Munich Malt will need to be mashed (not just steeped) so you may want to avoid that. Add another 2 or 3 lbs of light or extra light DME or if you want another can of light LME. I'd add another oz of northern brewers for the boil and maybe 1/2 oz of chinooks for the finish. Just my $0.02

Munich malt needs to be mashed (not steeped) to be useful. I'd argue the Victory does as well. If this were my extract beer, I'd add another pound of light LME and perhaps a 1/2 lb of 90L Crystal. Add another ounce of Columbus bittering hops. Add your finishing hops only in the last minute of so of the boil or even immediately post boil. 2oz dryhopping with Columbus sounds just about right.
