Subject: Suggestions for blueberries please?

I bought a large quantity of fresh blueberries some time back, expecting to make a blueberry wheat. When I searched the newsgroup for recipes, I found comments to the effect that blueberry wheat was boring, so I'm looking for something else. I think Denny mentioned a chocolate blueberry porter. Could you post a recipe? Any other suggestions would also be appreciated. I don't have a big refirgerator, and the space in the freezer could be used for something else.

I made a porter that was kinda on the sweet side with a fair amount of chocolate malt, and added 5 lb. of frozen, then thawed, bluberries to the secondary. Dead easy.....it was tasty, but the blueberries were very subtle. By the time the beer was a month old or so, you wouldn't realize it had blueberries in it unless you were told. ------------ >Denny -- Life begins at 60...1.060, that is.

Blueberry is a fairly subtle flavor, so anything you use it in is probably not going to knock your socks off. However, the blueberry wheat beers I've made have turned out nice. IMO, anything with too strong of a flavor is probably going to hide the blueberry. I don't know about blueberry, but my general experience with fruit is that you'll have to add some sweetening if you want it to shine. Either mash high or add Splenda. Basically let the blueberries go with it in the secondary for awhile and then start sipping. I ended up formulating my peach beer by drawing a 1/2 cup sample and adding minute, yet measurable quantities of things until I got the flavor I wanted. I then extrapolated to the batch and mixed it all up. Warning: This comes from somebody whose attitude towards fruit beer is "fruity notes aren't worth the effort; go for the symphony."
