Subject: Substitute for Victory Malt


I'm planning to brew a 6 gallon batch this weekend that calls for
one-half pound of victory malt (as part of a 15 pound total grain
bill). Alas, I don't have any victory malt on hand, but I do have some
biscuit malt. Would this be an acceptable substitute? What else might
you suggest?

Biscuit is a fine substitute for Victory. You can
also toast some base malt to get a Victory/biscuit flavor.
(You'll have to Google the "how to" for toasting malt,
as I've never done it.)
