Subject: Stout ?


I recently started kegging. I've been eager to try a batch of Stout and then
it dawned on me that my system is a CO2 gas system and most of what I read
suggests Nitrogen for Stouts. Should I just bottle the Stout instead of
kegging it? Isn't Stout's natural carbonation still going to be CO2?

I always keg my stouts with just CO2. The whole nitrogen thing is
purely optional. IMO, any beer will be perfectly fine kegged using CO2.
Ignore anybody that says you *have* to use nitrogen for a certain style.

Yes, "natural" carbonation is CO2.

I definitely agree. IMHO, the only reasons to use nitrogen are (1) very
long beer lines and (2) wanting to duplicate the famous creamy Guinness
head. In both cases, pure CO2 would overcarbonate the beer, so nitrogen
is added to produce higher pressure without oxidation or additional
carbonation. Unless one (or both) of these is important to you,
nitrogen is more trouble than it's worth, and probably counterproductive
(i.e., a bad idea) as well.

Nah, unless it's an imperial stout or something you want to bottle
condition. And yes, bottle carb'd beer is still carb'd with CO2.
Personally, I like stout with CO2... it's just a matter of preference.
Nitrogen along with a stout faucet will give you that big creamy
Guinness-style head, but it's perfectly fine to carb it with CO2 and
dispense with a regular tap. If you used a lot of adjunct you'll
probably have a nice big head anyways.

I would bottle condition a RIS, and indeed have done, but use smaller
bottles though if you're worried about the ABV. For a RIS you should
under-carbonate. It should be nearly flat with just a prickle on the tongue
carbonation.

Guinness invented nitrokeg. They called it an "iron lung" which says it all
for me. I much prefer naturally carbonated stouts (ie real ale versions)
like O'Hanlon's Dry Stout and Pitfield Shoreditch Stout.
