Subject: Starter question


I made a starter yesterday and had intended to use it tonight but now
i am not going to be able to use it. is it possible to put it in the
fridge for a week or more? i most likely will be working through xmas,
12 hr days without a day off, so wont have time to brew. if it wont
last that long, could i pour thestarter into a batch i have sitting in
secondary with cherries and then bottle sometime soon?

When i made the starter there were clumps of something in the wort. i
can only assume it was dme, could it be that the dme is old? or is
that normal? i have noticed it before when i made a starter.

No problem -- it'll be fine for a couple of weeks refrigerated.

I've done that before. Put it in the fridge for a while. When you take
it back out, let it come to room temp and then the day before you use
it, make up a small wort (say a pint), pour it into your starter, shake
it up well and let it come back to life. Will work like a charm.

Some yeast is clumpy - maybe it's just yeast clumps?

I do this all the time for higher gravity beers. I split the starter into
two batches one for the primary fermentation and one to add back for bottle
priming if I am not kegging.

It'll store in the fridge for a week or two just fine. If it's much more
than that you might want to make a fresh starter from it when you are ready
to brew after the holidays.

Could be that you just didn't dissolve the DME completely.
