How long does maximum extraction of freshly ground spices occur in
secondary? I think a few days, but wanted to see other's opinions...


I've made the usual holiday beers adding spices at the end of the boil
with success. In fact, this time I was peeved that I didn't get that
Holiday vibe smell during brewing. However, I think the components of
the spices I love to smell during the boil are being driven off and do
not translate to the beer the way I'd like them to. Preliminary
samples prove this. Not that simple though; I think spice extraction
is diminished in secondary... Or it takes longer than a week for max
extraction. I figure if I sample a week after adding spices the
extraction won't change much, so I add more...
What do ya spice beer folks think???

It really depends on the spice, the beer, and the crush. Some spices like
cin and nutmeg can get old in the cabinet and lose the punch over time. For
whole spices, are you crushing, grinding, or turning them into powder?

Regardless, I think after a week or two, you should have gotten most of the
spice flavor you were ever going to extract.
