Subject: Smackpack lifespan after smacking?

The other day I opened the fridge and found a roast sitting on the shelf my wife has said was mine to use. Well, it appears that the 6lb roast smacked my smack pack of Wyeast Saison. It is very slowly expanding while sitting there in the fridge. I was going to culture some yeast from a Delerium Nurnum and do a Dubble or Belgium Strong Dark Ale, but I think I may be doing a Saison now. If I hold off on using the Saison yeast what's the consensus if I make a starter from the expanded smackpack in 2-3 weeks? I've used WY1968 and Wyeast Koelsch starters that were about 1-1.5 months old with no real problem so I figure that the Saison will wait a while, but... I can make a Saison next weekend, but it wasn't what I was planning. Good thing I haven't bought any grain yet. Regards, Bryan

A buddy of mine that owns a brewshop just GAVE me 21 white labs and 23 Wyeast assorted yeast. All had expiration dates of Aug-Dec05 I had to smack them about 3 days before I make the starter to pitch 3 days after that! Small price to pay for over $200 worth of yeast.

But if any of them are blends, be aware that, at this point, you don't know which yeasts survived and which didn't, so bubbling after pitching doesn't mean much except that you have *SOME* live yeast. -- -- Andy McKellar Dallas, TX

Make a starter with it in a couple weeks and I don't think you'll have any problems. John.

Besides when I'm spending 8 hours smoking a roast on a holiday weekend I can't do those other household projects like painting the family room. I figured it would be fine considering several people have recently brought back several year old tubes and smackpacks on the group. Mostly I was lamenting the way that that bloody germ ridden chunk of hog flesh molested my poor Saison. Well, I showed it. I drowned it in a brine solution for 24 hours then roasted it over charcoal for 8.5 hours. Then in a fit of rage I pulled it apart with my bare hands. I have a Duvel clone fermenting happily with a tube of Wyeast (pitched into a starter, of course) that was dated April 8, 2003! The LHBS gave it to me 3 years ago becasue it was out if date then.
