Subject: Scotish ale question. (Using the last of my free extract)

Ok, I haven't done a Scottish/Scotch ale since I restarted homebrewing last year after a 10 year hiatus. I have made a bitter and a robust porter with my windfall extract that I mentioned a few weeks ago, and have about 9 lb of extract left. Not enough for a wee heavy, but I'm looking to do a Scottish ale none the less. I'm figuring on the 9lb of LME and 1 lb of 40L crystal simply since I have it. Make 5 gal wort, reduce 1 gal to one quart in second pan, return to main boil pot and top up to 6 gal and boil 1 hr with 1oz of 5.6 AA Kent Goldings. Looking at malty and caramely with a slight bittering from the hops and no flavor or aroma. I may go with 3/4 oz. I can't decide what may be over/under hopped for the style since I haven't done it in god awful ever. I grabbed a couple of scotch ales at the one decent liquor store around here just to refamiliarize myself with them and had forgotten how pleasant they are even if they aren't hopped out the yin/yang like most of my brews are. So, any recomendations on the hopping? I have an oz of Northern Brewer and an oz of Chinook if they would do better, but I have almost an lb of Goldings, so I thought to use them. Bryan

The best compliment I ever got from my father concerning my beer was, "that's a bit much" refering to a bitter. Not an ESB, not a Pale Ale, not an IPA, a fucking bitter. His favorite beers were Bud Light, PBR, and Falstaff. He thought Buckhorn was Good beer with a capital G. I love my father, but his taste in beer sucked. That said, there is no shame in an 80 shilling Scottish ale. I can get more extract, or partial mash a few lb of pale malt, if a wee heavy is what I truly wanted, but I think I can do well by a 70 or 80 shilling brew. I'm just a bit leery of the hopping since I haven't done one in about 11 years. Maybe 10, but I remember. I did about 4-5 back then and the first 1-2 were learning experiences. I DON'T want to under hop since I really don't like sweet beers, but I can't see an ISA (India Scotch Ale) really being a winner either. Balance is everything for this batch I think, and balance isn't my forte. Hops anyone? Bryan

I have a recipe that's fairly close to yours. I only use 2/3 oz of Target and a 1/2 oz of Fuggles for both flavor and aroma additions. What you might do is use 2/3 oz of the Kent for bittering and the other 1/3 oz at flame out just to give the brew a very slight aroma for nose appeal. Mark R
