Subject: Sanitizing SS with heat


How long and how hot should my oven be to sanitize my stainless steel
cane, spoon, and funnel? Also, is star-san safe for stainless?

You're right, I wasn't sure if starsan was safe for stainless. I could
almost swear I have heard not to use starsan but haven't been able to
find the reference. I had been using one-step but am out and have brew
day planned for saturday, just didn't want to etch my gear.

You're probably thinking of recommendations not to use bleach on SS.

Thanks for info, I thought it was but had a nagging feeling I'd read
something about not doing that, maybe it was chlorine sanitizers.

Far as the rest, it dawned on me that I could just heat at 250f for 20
minutes and kill most anything I can kill without actually autoclaving.

As to the first, I dunno - but Starsan is perfectly safe for stainless.

I like to keep all my plastic & glass brewing gear in bleach water when
it's not in use. I know I can't do that with stainless steel. Can I
leave the stainless cane in starsan for days (or weeks) at a time
without hurting it? right now I just use reagular soap & water to wash
it, then stick in the boiling wort for the last 10-15 minutes to
sanitize/sterlize.

I don't know if that would be safe - but it's not really necessary to do
that. Just get the cane clean, then a short contact time with Starsan
will be fine.

That sounds like a decent routine - as long as the cane is clean. You
might want to add a short Starsan soak (& run some through the cane )
prior to boiling.

Is your intent to sanitize or sterilize?

I found this bit at

"Dry heat, steam, or hot solutions are also very effective at sterilizing
surfaces. Pure heat (i.e., flame or radiative heat from an oven) can be used
only with metal or glass. Glass bottles can be effectively sterilized by
placing clean bottles in an oven with aluminum foil over bottle opening (wet
bottles work great; steam is very effective), setting oven to 250 degrees
F., letting them bake for 30 minutes (once the temperature has stabilized),
and then turning off the oven and allowing the bottles to cool slowly.
Boiling wort or water can sterilize very well and has been used on hoses
(watch type of hosing, make sure it's heat resistant to 210 degrees F) and
wort chillers."
