Anyone have a Good recipe that comes close or just a good Scotch ale
recipe that you 'd be willign to share with a bit of smokiness?

I found this in my collection. Made it last year. You may want to
cut back on the peat malt. Was quite smokey, but did have a great
mouth feel. Doesn't say what the FG should be, but I recall mine was
around 1.032. I also took about a quart or two of wort and boiled it
down to a syrup for caramelization.

Wee Heavy, a Strong Scotch Ale
Recipe supplied by: Mark Edelson, Iron Hill Brewery, Media, PA.
This beer won a bronze medal in the Strong Scotch Ale category at the
2001 Great American Beer Festival.

Brewer's comments: "Yeah, yeah, I know purists don't think peated malt
belongs in this product, but in small amounts it adds great
complexity. The judges seem to agree."

Malt
13 lbs Maris Otter Pale Malt
1.5 lb Carapils
6 oz Roasted Barley
6 oz Medium Peated Malt

Hops
2 oz UK Fuggles (4.3% AA) at 90 min

Yeast
White Labs WLP028 - Edinburgh Scottish Ale Yeast OR
White Labs WLP005, British Ale Yeast


Mash Schedule - Single step infusion at 158 degrees F, mash off at 165
degrees F

Original Gravity: 1.085
Mash Efficiency: 80%
IBU's: 35

What was your boil volume?
What was your ending wort volume?
Did you boil for carmelization from the boil volume or from
the ending volume? I ask because I have never done this.

OK, I located my brew notes for this. I remember now, I had trouble
with getting the OG of 1.085. My notes tell me that at 90 mins., the
SG was 1.062. I boiled longer, to 2.25 hrs. to get a gravtiy of
1.074. I believe my boil vol. was about 6.5-6.75 gals., but I did not
indicate what the final vol was. I seem to recall it was short, like
around 4 gals. The .5 gal boiled for caramelization was taken from
the wort vol, boiled in a separate pan while the main wort boiled. It
was reduced to 1 pint.

I seem to recall, too, that at the time I was falling short quite
frequently on OG. Turned out I was crushing too coarse.
