Subject: Raspberry Wheat Recipe / Advice


I tried a raspberry wheat recently and really liked it. I have never
made a wheat beer before, or used raspberries but I am willing to
give it a whirl. Does anyone have any good all grain raspberry wheat
recipes they would not mind sharing? Also, any words of wisdom on
the best way to use the raspberries in the process? Should I go for
raspberry extract or go for the berries themselves? Thanks in
advance!

Assuming that you are not wanting to make a framboise, a good place to
start would be to make a generic american wheat beer and then add .5-2
lbs of raspberries per gallon to the secondary.

Funny you ask that. I was just looking in to that tonight since I am
heading to the store tomorrow. As usual, everyone seems to have a
different idea of how to do it:

- Some say fresh fruit runs the risk of bacterial infection
- Some say frozen or extract or cans
- Some say add during secondary
- Some say add during primary

I am thinking I will just grab a standard wheat beer, and add a few
pounds of strawberries during primary.

I made a raspberry wheat using an all grain recipe and then pouring in
4/5 bottle of raspberry extract. It has been very well received by
everyone who has tried it.

My first try involved real raspberry's and I can tell you it was alot
more work for a lot less flavor.

How much real fruit did you use? I actually found the opposite. The one
attempt using extract didn't result in nearly as much flavor as when I
used real fruit.

It has been awhile but I believe I used about 4 pounds for 5 gallons of
beer. I have a friend who is going to re-create this little adventure
next weekend and hopefully he will post back here when it is done.

Here's my $.02. One more opinion to keep you guessing.

Have only made 1 raspberry beer and it was a brown ale base, New
Belgium Frambozen clone.

Used 2.5 lbs fresh raspberries/5 gal. (pureed in blender) added to
secondary and it turned out with plenty of raspberry flavor - I
wouldn't go higher myself (in fact I would lower it a bit if I made
this recipe again), esp. in a wheat beer, but I'm not really a fruit
beer drinker. BTW I got this suggested amount for fresh raspberries
from an article in Brew Your Own magazine.

I think you'll just have to try it yourself to see what quantities you
like, but go for the secondary for sure imho.

Agreeing with pretty much everyone else, a basic American Wheat recipe
is a good base.

I know you are looking for a all-grain, but I just made an extract that
I thought turned out very well.

My recipe was:

10 Gallons:

6.6# Munton's Wheat LME
2# Munton's DME Light
2# Honey
1oz Cascade 5.3% @ 60
1/2 oz Cascade 5.3% @ 30
1/2 oz Crystal 3.9% @ 5
1/2 oz Crystal 3.9% @ 0(Flameout)
1/2 oz Cascade 5.3% @ 0(Flameout)

Wyeast 1056

OG: 1.041
FG: 1.008
IBU: 15.6(per Promash)

Fermented ~7 days @ 61F

At kegging I added 4 oz of Raspberry extract to 5 gallons. I
carbonated to ~3.0 volumes. The raspberry is there, but I think just a
little bit understated. I would have liked a little more. I may still
add some to the keg. Maybe another 50%, for what would have been 6oz
at kegging.

The other 5 gallons I just kegged up as it was.

Between the Cascade and cool fermentation it gave it a nice citric tang
that complements the wheat very nicely. Almost as if someone had
squeezed just a few drops of fresh lemon juice into the glass. This
has faded some now though with further conditioning.

It gave me the urge to get back into brewing actively again. I have
been on a bit of hiatus, and this was the first batch in quite a
period. I had been doing all-grain, but could never find enough of a
window to do a batch. As it was I found "just enough" to do an
extract.

Any basic wheat recipe should serve well as a base. IMO, keep the hopping
low since you want the fruit to shine through without fighting with
the bitterness of the hops. Personally, I like to use fruit instead of
extract. What I do is freeze the berries ahead of time which helps to
break the skins, then add the berries to the secondary. I wouldn't add
them to the boil or primary, since you'll lose a lot of the flavor/aroma
that way. I just thaw them and put them right into the secondary. Some
people like to try and heat them up to pasteurize them first, but I've never
thought it necessary. You risk setting the pectin in the fruit that way.
IMO, as long as the berries are clean enough that you wouldn't mind eating
them raw, then they should be clean enough to add to the secondary. By
that time, the alcohol and pH of the fermented beer should be enough to
fight off any infection the berries might have. Sanitation is a lot more
critical before fermentation than it is after. On the other hand, it is
still important. If the berries are dirty or look funny, it would probably
be a good idea to try and clean/pasteurize them first.

How much to use is very subjective. I like to shoot for around 5 - 6 lbs
of berries in a 5 gallon batch. Any more and you start to get into the
alcoholic fruit punch area. If you don't use enough then the flavor
will end up fairly subtle. Raspberries tend to be pretty strong though,
at least compared to something like blueberries (another fruit/wheat beer
I make sometimes). I did a cranberry wheat beer using a Wit yeast once
that really turned out nice. The tartness of the Wit yeast really fit
well with the cranberries.

I tend to vary recipes everytime I make the same type of beer again, but
a starting ballpark for a 5 gallon batch would be something like:

5 lbs pale malt
3 lbs wheat malt
1.046 OG (assuming 75% efficiency)

15 - 20 IBU of hops (noble hops work well)
German wheat yeast
5 lbs raspberries added to secondary

Just a follow up to this. I just found out that I won gold with both
variants of this brew!! I haven't gotten my scoresheets back, so I am
not sure what the opinion was on the Raspberry as far as balance of
fruit, etc but it must not have been too bad. Both beers scored a
39.5.

Thanks. I'm still pretty hyped about this. I just can't believe I did
that well. I thought they were both "pretty good" but I didn't really
expect to get two golds. I figured maybe mid-30s if I was lucky.

Flavor extracts work ok.....a lot of them taste like candy to
me....like sticky 2 years old gnawed on candy....

on brewing (JW, I took allot from the recipe / fdeedback you posted,
thx):

12lbs Wheat Malt
5lbs 2 Row Pale
2lbs Clover Honey

Cascade 1oz @60
Cascade .5oz @30
Liberty .5oz @5
Liberty .5oz @flameout
Cascade .5oz @flameout

2.5 lbs frozen raspberries per 5gal when racking to secondary. Will
boost flavor with raspberry extract @ kegging if not enough.

I plan to brew this next weekend, I will let you know in a few weeks
how it turns out.

I have a dumb question. If I use real berries instead of extract, do
I use red or black raspberries? Just curious as to what everyone
else does. I can't seem to find black rapsberries anyplace but the
red ones are everywhere.....

The taste of black raspberriescomes through better. Maybe that why
they are hard to find. I'm planting some black raspberry bushs next
month.

I use both. We've got a mix of both red and black raspberries growing in
our backyard. I think either would be fine, if you can get the red ones
easily then use those.

How did you come out on this? Should have been in the bottle/keg for a
while now.

It came out pretty good. I ended up just using the frozen red
raspberries that were available at a local supermarket. The
secondary fermentation that the raspberries casued made the beer a
little drier and more sour than it was originally, but everything is
mellowing with age. All in all it was pretty good but I think I
would try to add more non-fermentables to give a little more body
and try the extract flavoring so I don't have the secondary
fermentation to dry it out. Maybe I did something wrong, dunno, all
in all its a good drinkable beer though, so success!
