Subject: Other uses for malt extract


Malt extract seems like nifty stuff, but I've never seen it outside
brewing. Can it be used for other purposes? Sweetener in cooking for
example?

Yeah, you can use it in place of sugar for a lot of things.

Use it to make bread, use it for malted milk shakes (carnation malted
milk mix is just DME with some flour to prevent clumping)...you can use
it to add some je ne se quois to sauces and marinades.

Use it in place of some of the sugar when you make cookies. It will
help keep them moist.

I got a ton of recipes actually. I was thinking of writing a BYO
article actually.

The next obvious question would be, can you make beer from it?
Apparently there's also some evaporated milk in it.

Someone told me, full of guile I'm sure, that the stuff in malted milk
powder and the stuff in beer were different things. So sue me.

The majority ends up in processed food. Check out breakfast cereals, they're
full of it. Popular chocolate malt drink mixes (don't know what brands in
USA but milo and ovaltine are just two) As one of my jobs is typesetting
food nutrition and ingredients labels, I know a lot of food product has the
stuff in it.
If you read the ingredients listing on food products, I think you will find
that you have seen the stuff outside of brewing and experienced it in a lot
of food you eat.

Caramelized Malt Clusters
Lucy Saunders
prep time : Advance prep required
recipe type: dessert and sweets,snacks and dips
ingredients: 2 cups spent grain (preferably caramel malt)
2 tablespoons corn oil
1 teaspoon salt
2 cups sugar
1 teaspoon dark corn syrup
1 teaspoon ground cinnamon
1/8 teaspoon grated nutmeg
1/8 teaspoon white pepper
1. Toast the damp spent grain on an oiled baking sheet in a 300 F oven
until dry. Remove from heat, sprinkle with salt and set aside. Wipe the
baking sheet with oil again and set aside.

2. Caramelize the sugar by placing it and the corn syrup in a heavy
2-quart stainless steel or enameled pan, and cook over medium-high heat
until the syrup reaches 300 F. Remove from heat and let the boiling
subside and cool 3 minutes. Stir well.

3. Add the caramel malt and spices, and stir again. Place on the oiled
baking sheet, pressing into a thin layer with the back of a wooden
spoon. When cool, the caramelized malt will break into little clusters.
4. Serve on a salad of baby spinach, sliced strawberries, and sliced
white mushrooms.

I would think that it would be a good glazing agent for meats (or even
biscuits/cakes)

Since I began brewing, I think it's funny when I ask for a milkshake
and I'm asked "Would you like malt in that?" Let's see, would I like a
bunch of ground up grain, including husks, in my shake? No thanks, I'd
prefer malt EXTRACT ;-)

For situations like this I invented the verb "poobear:" to gratuitiously
shovel and/or scrape a tasty food out of a container using bare hands or
a hacked implement.

Malt extract is great for poobearing.

During Prohibition, it was sold as a sweetener by many of the major
breweries...it's how they stayed in business.

I made an incredible flourless chocolate cake for my wife's birthday
using it. The recipe is called "Malted Chocolate Decadence" and it
certainly was!!!
