Subject: Old yeast


While cleaning out my beer fridge, I found an old Wyeast 2112 California
Lager smack pack. At first I was just gonna chuck it out... then I
figured, what the heck, the worst that could happen is that I do so in a
week. I smacked it last week. As of yesterday it was only about 3/8".
This morning, it was fully bloated. It is in a good starter now. It'll be
a while 'til I can use it but obviously it'll last.

I've got an old Safale K-97 bottle of yeast that I split from a starter
possibly 4 years ago. I might have to give it a chance after reading your
post. There's no visible signs of infection, which would surely be evident
by now.

Speaking of old yeast, today I decided to use some refrigerated
Safale-04 dry yeast with a printed expiration of 7/03. I pitched it and
it was bubbling within 2 hours. Happy me! I used the other pack too.

Experiment successfully completed.

I knew I forgot to include something there... the mfr. date on the 2112
smack pack was 23-mar-05

Yeah -- that's not really that old for a smack pack. One of the major
advantages of smack packs over tubes (at least in my experience) *does*
seem to be their longevity.

I just got done kegging a Belgian strong golden made with a 3 1/2 year
old tube of WY1338. Made a starter with it and it took the beer from
1.083 to 1.006.
