Subject: Off topic, but what the heck...

I've been listening to several beer related podcasts the last couple of days, and have heard 2 or 3 of them discussing/making/drinking mead, and wanted to give it a shot to see what it tastes like more than anything. I want to make a very small batch of a simple mead, nothing but honey, water, and yeast. I have approximately 15oz of honey, and I'm going to ferment it with Champagne yeast. I want the resulting mead to be more dry than sweet...and will probably bottle it to make is a sparkling mead...now....here's my question. How much water should I start with with my 15oz of honey? One more...I was getting the Champagne yeast out of the freezer, and found 1/2 oz of Saaz in there that I had forgotten about. If it's not too old to use...should I use it to bitter the mead? If so, any thoughts on the addition times and amounts? Or leave it out as I originally planned? Thanks again! Ricky

I prefer hoppy beers, and in general don't like "sweet" beers...so I'm just a bit apprehensive at brewing nothing more than sugar (honey), water and yeast. I'm sure the dryness from the champagne yeast will balance any residual sweetness that might be left though. I went ahead and made it, ended up with a half gallon, and didn't put the hops in. I hope the yeast does something worthwile...this will be the first ferment I've done in 3 years in something other than a plastic bucket, so I'm hoping it'll give me something to look at as well as drink, lol. I have another pound or so of extra light DME and another gallong jug....so tomorrow night I'll probably experiment with the Saaz. (evil grin) Any of you beersmith or other brewing software guys want to figure out a hopping schedule for me? I have 1/2 oz of 3aau Saaz, and want it fairly bitter, but with some of the Saaz character on the nose and finish as well. I do have some other hops...but wanted to make a smallish batch and use nothing but the Saaz. As always, thanks in advance everyone. Ricky
