Subject: My Guinness experiment

Amongst the stuff I picked up at the auction are three adjustable stout taps. I tried one and it works brilliantly on a porter I have kegged. So, the next obvious step is to make a Guinness Draught style of beer. For the recipe, I used pils malt as a base as it's all I had plus roasted barley and chocolate malt and 500g of cooked flaked barley, added for the protein content and it's positive effect on head retention. To keep it on the dry side, 1-Kg of the fermentables was plain white table sugar. Guinness also has a clean finish so I am fermenting it on a lager yeast at lager temps. Hopefully, with sugar and lager yeast I should get a clean dry finish. Now when I keg, I will lightly force carbonate - Guinness is not very carbonated, and push it at high pressure through the adjustable restrictor to get the fine foam and cascading bubbles. I'm not splashing out on a nitrogen set-up, When I'm done serving I'll de-gas the keg to stop excessive carbonation. This is probably not what most brewers would do to make this style, but it all makes sense to me :-) Steve W (in Aus)
