Subject: Long Secondary Kill Yeast?


I am making my cider, and want to age it in a pressurized Corny but will
eventually move it to bottles. Can I let it sit in a Corney for 2
months, and then add priming sugar and bottle?

If it's in a corny, why not just carbonate it with your CO2 tank? That
way you don't have to worry about the yeast. However, you could
probably do it that way if you really wanted to.

Wait, I see what you're saying. You're basically using the corny like
a secondary. Then you want to rack off to a bottling bucket, prime, and
bottle. Yeah, that should work fine. I think you should be fine with
the existing yeast after 2 months. However, I'm a beer guy, not a cider
guy. A lot of the principles are the same, but I can't say I've got any
direct experience with long aging times on a cider.

That is right. I want to have the cider in bottles so it is easier to
hand out to people.

I typically secondary my ciders for 3-6 months and have trouble carbing
them afterwards.
