Subject: Hacker-Pschorr Oktoberfest-Marzen query


Hello All

Next brew fest is 1/6 or 1/13 and is German beer day. Making another
hefe and I'm going to have a whack at a Hacker-Pschorr style
Oktoberfest-Marzen. Since this is a Munich target, I think I have 4
yeast options:

WLP820 Oktoberfest/Marzen
WLP838 South German Lager Yeast
Wyeast 2308 Munich Lager Yeast
Wyeast 2633 Oktoberfest Lager Blend

Any recommendations? Left to my own devices I'll probably go with the
WLP838, but I thought I'd ask.

You really have more options than that -- with some notable exceptions,
lager yeasts aren't really as specialized as the labeling might leave
you to believe. My favorite all-around lager yeast is WLP 802 (Czech
Budejovice). I also like 2278 from WYeast. Both Czech strains are easy
to use, reliable over multiple pitches and can deal with fairly high
alcohol production for bigger beers.

I've been using Wyeast #2206 Bavarian Lager for all of my German lagers
with great success. I've done a few Oktoberfest/M=E4rzen, a Maibock and
a Munich Dunkel and all of them have fermented very clean and crisp
with a nice malty profile.
