Subject: Getting restarted...


After an abrupt end of the last brewing season (don't ask!), I'm getting
back started. I spent a good deal of yesterday cleaning kegs and carboys.
I just got done making some starters and getting 2006-2007 batches 1 and 2
yeasts going. Whew... a bunch of work!

My big conundrum.... I have about 12 lbs of Muntons Superlight LME from
last winter/spring (I said it was an abrupt end). The use by date is July
'06. I used a bit for the starters. It's been sealed, it smells fine, and
the starter juice tasted ok... it was a bit tangy but I don't know if
that's because there was no hops in it. Hmmmm.... to try it or to just
write it off. That is the question.

Oh, a plug... for Tom Davidson and his shop in N. Baltimore County, The
Thirsty Brewer. As ever, he was open, he had everything I wanted, and was
friendly to boot. Patronize this shop!!!

IMO, you've already got it so you might as well use it. It'd probably
take you forever to go through 12 lbs just by making starters, so I'd
try making a batch or two with it. Just don't get your hopes too high.

I've been in the same situation before, ended up with left over LME that
sat around for awhile. It makes OK beer for just drinking yourself. I
wouldn't share it with anybody that you're trying to impress, and definitely
don't expect to enter it into a competition. However, you can make a batch
or two with it to tide you over until your other beers age and are ready.

You can also try to compensate for any off flavors by picking a recipe with
lots of character where flaws would be less noticable. IOW, old LME would
probably be better used in a stout rather than something like a pilsner.
