Subject: FWH Extract brews


I want to try FWH but I only do extract and specialty ATM. I wanted to know
if I tried this should I only bring the extract and water to 150-160F then
add the hops and let it sit for 30 minutes or should I bring this to a boil
then turn off the flame and add the hops for 30 mins.

Also, should I only use the recipes hops that are called for i.e. flavouring
hops, for the FWH or should I use additional hops and if so what additional
amounts would you rccomend for a 5 gallon batch. I will be testing this on
an arrogant bastard recipe I have already made once that came out good, but
even though it was loaded with late hop additions I felt it was missing hop
flavour. Thanx in advance.

150-160F should be fine. The post-sparge temp of most all grain worts
will be in this range or even lower.

No reason to bring it to a boil first....

Start out by using whatever the recipe calls for in terms of a flavor
addition. Decide what you think and adjust in the future if needed.

My normal procedure is to bring only the water up to a boil initially, and
then turn off the heat before stirring in the extract. This tends to
bring the temp down quite a bit. IMO, if you add the extract/water together
from the beginning, then I would probably bring it up to 150-160F and
add the FWH. I would not bring it all the way up to a boil then turn off
the flame and add the FWH hops. I don't know for sure, but I'd be
concerned about wort right on the edge of boiling driving off the flavor
like a normal boil would. Doing it at 150-160F more closely mimicks the
procedure for all-grain brewing where you add the FWH hops after the
sparge.

It's all about personal preference. What I would do is take your normal
flavor addition and make those FWH instead. Maybe back down slightly
on the bittering hops to compensate, but that's up to you. The FWH hops
will give you some bitterness, but not as much as a normal 60 minute
addition would.

A lot of this is going to take some trial and error on your part in order
to find the flavor balance you are looking for, just like any other recipe
tweaks.
