I just read John Palmers new "How to Brew" and I saw that he puts half (or more) of his LME in at the end of the boil. I was wondering what kind of difference that would make. Thanks! I agree, it's mainly to keep the beer lighter and to improve the hop efficiency. If you're boiling on your stovetop then the most you can probably boil is probably 2.5 gallons, or about half a batch--so just use half of the LME and you should be fine. Just make sure that you add the extract before you start cooling your wort, to ensure that it's pasteurized. In partial boils the idea is to increase hop efficiency by boiling at or near the gravity you expect after diluting with water. It can also help prevent some darkening. If you're doing a full volume boil it wouldn't make much sense to do this IMO.

Extract tends to darken during the boil. Some people have suggested that when trying to brew a lighter beer using extract one possible alternative is to add most of the extract during the last 15 minutes of the boil. This provides enough time to properly sanitize it but doesn't allow it to darken. There was an article in BYO a few years ago about this, but I don't remember exactly when. One is it increases hop efficiancy when doing a partial boil. Two it help keep lighter styles from getting too dark. Three, late additions can help get rid of some "extract" flavour, like caramel tastes, etc. Gerard
