Subject: Dry yeast ?

I bought a Mexican cervesa 20 min boil kit from Midwest and it came with a shiny envelope of yeast with ATB on it. Anyone know what kind of yeast this is? Here is the kit: Product Description: Mexican Style Cervesa 20 minute boil kit: This Mexican recipe is very similar to Corona. With a crisp and light flavor, this beer is a clean thirst quencher. Our ingredients for this recipe include a 3.75 lb. Brewmart's Mexican Style hopped can kit, 2 lbs light DME, 1/2 oz. Fuggle aroma hops, priming sugar and yeast. Any advantages to using a wet yeast? What one would you use? Thanks

Not trying to larger. What liquid yeast (for an ale) would you use to make a Corona clone? Ferment Temp? What one would you use? > > Thanks Unless you are just itching to make a true lager (in which case I don't think I'd recommend using that kit), I'd spent $1.75 on a packet of Nottingham or US-56. Both are clean, well attenuating, and will work well in the lower 60's. Lagers take a lot of time, effort, and tie-up your equipment. With the lager yeast, you pretty much have to go with a liquid culutre (there are dry lager yeasts out there, but I haven't been impressed with them). It's hard to tell the difference between the dry ale yeasts above from 1056 or WLP001. ab

Throw it out! It depends... Are you gonna actually brew it as a lager? Then use a german lager strain. If not then I'd use Euro Ale (White labs). If you do this ferment WAY cold, like 60-63. It won't get stuck around there (stop fermenting). I've gotten it down to 57F, takes a stink of a long time but it's possible. Have fun with the Mex Lager... I haven't heard of it, but in general it's a good idea to go with a fresh packet of "name brand" dry yeast rather than the generic stuff that comes with the kit. Besides not really knowing anything about the quality of the generic yeast, you also don't really know how old it is or what the storage conditions have been like. I don't have any specific recommendations, but even if you didn't want to go with a liquid yeast, I'd still get another packet of dry yeast to replace what you have. John.
