Subject: Disappointing UBU ALE Clone

Don't recall where I found the recipe, but I converted it to AG from the original extract: 10.5lbs Maris Otter 2lbs Wheat Malt Grains 1lb 60L Crystal 1oz each Chocolate & Black Patent 1.25 oz Fuggles boiled 40 mins 1 oz Cluster " 20 " 1 oz Mt Hood at flameout Orig. recipe called for Danstar London, but as it is no longer made, I used 2 pks. Windsor. Hit my target G of 1.066. Was vigorously going within 3 hrs of pitching. Kept it in cellar, where temp was high 60s (F). After 3 weeks in primary, all activity had ceased, and settling of yeast was evident. On bottling today, I was annoyed to find my FG at 1.025, rather than the 1.010-1.016 expected. That's only 62% att. But my biggest concern was the cloudiness. Would it be perhaps due to the wheat? I had never brewed before with that amout of it. Somehow this recipe seems off. Comments welcome. The cloudiness may well be from the protein in the wheat. How did you aerate the wort?
