Subject: Diastatic power of 2-row?


I'm planning to make a very light lager for my non-homebrew friends
using an all-grain version of Denny Conn's Cream Swill recipe. Denny's
recipe was primarily a quickie extract using a little 2-row, flaked
maize, DME, and rice syrup solids. Basically, I've replaced the DME
with additional 2-row and the rice syrup solids with flaked rice.

The grain bill is:

5.5 pounds 2-row
5.5 pounds flaked rice
0.75 pounds flaked maize

These are essentially the same proportions as the extract recipe, but
I'm wondering if there's enough 2-row to convert the rice and maize.
Do I need to increase the 2-row, or will everything convert as is?

FWIW, I use 6 row in my recipe. Not so much for the diastatic power as
for the slighly "grainier" flavor, which I think works well in this
style. But the 2 row should be fine. BTW, I also alwyas add some yeast
nutrient to this recipe.

I would say that the is marginal. If you do it, be sure to do a starch test
and allow for extra time for the mash.

Keep some amylase enzyme on the shelf if it fails a starch test and you
can rest easy even if it fails.
