Subject: Daytime outdoor boil

It has been too cold to boil outside after dark the last few days so was planning to enjoy the sunshine and boil saturday afternoon but then it hit me, will brewing in the sun skunk my beer?

The skunking stuff (forget what compound it is at the moment) is fairly volatile, IIRC. Basically, it's only really an issue once you get the beer into a container (carboy, or even worse a sealed bottle). I don't think you'll have any issues with it during the boil. The sun and hops might react a bit, but any negtive effects will be boiled off, so there's no permanent damage. When I do all-grain batches outside, I almost always do it during the day. I've never noticed any problems. John.

I think sunshine is only dangerous during and after fermentation? If I remember correctly, the skunk taste/smell in beer is caused when ultraviolet light causes a reaction that turns the hop humolones into something called mercaptans by either adding or removing (I forget which) an OH to the molecule. These mercaptans are extremely volitile just like hop aroma, and should boil off very quickly. I woudln't worry at all about boiling in direct sun light.
