My brother asked me if a recipe calls for 5 lbs of DME and
5 lbs of LME, why can't he use all DME?

I didn't have an answer.

He can. Just reduce the specified quantity of LME by about 10% to account
for the water that is in LME.

The ROT (read: Rule Of Thumb) I always go by is 5 pounds of pale malt equals
4 pounds of LME equals 3 pounds of DME.

Some brands of malt extract have a different ratio of fermentables to
dextrins, I.E., some brands will be fuller bodied than others. It may
be related to this.

There is nothing wrong with all DME.

You can, but it's not 1:1. LME is 20% water. So if the recipe
called for 5 lbs of LME it would be equivalent to 80% as much DME
(IE 4 lbs of DME). So for this batch, using a total of 9 lbs of
DME would be the same thing.

This is assuming that you're using the same type... IE if it's dark,
amber, light, extra light... etc. Also be aware of any effects there
will be on the FG if you are substituting brands as well. If the
recipe calls for United Canadian LME and you substitute it for 80%
as much Laaglander DME, you'll end up with a different FG.
